Pineapple-Nut Bread
- 1-1/2 cup unbleached all-purpose flour
- 1 cup bran
- 1 tbsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1/2 cup roasted peanuts chopped
- 2 eggs, lightly beaten
- 1 can (8 oz.) crushed pineapple, including juice
- Add wet ingredients to dry ingredients and stir thoroughly.
- Bake at 350F in a greased loaf pan for 35-40 minutes.
- Test with a toothpick for doneness.
- (When toothpick is dry, bread is done.)
