Baked Penne And Sun Dried Tomato Sausage With Ricotta Recipe

  1. Preheat oven to 350 F. While pasta is cooking to al dente, heat extra virgin olive oil in a skillet.
  2. Saute/fry sausage 2 to 3 min.
  3. Add in spinach and cook till wilted.
  4. In a large mixing bowl combine sausage, spinach, tomatoes and ricotta.
  5. Mix pasta with other ingredients in a bowl.
  6. Adjust seasoning to taste.
  7. Place in a shallow baking dish and bake for 20 min or possibly till cheese is bubbly.
