Mediterranean Pasta Salad
- 12 lb pasta
- 1 12 cups bick's dill pickles, Garlic, chopped
- 1 red pepper, julienne strips
- 1 green pepper, julienne strips
- 12 cup feta cheese, crumbled
- 12 cup mozzarella cheese, cubed
- 12 cup parsley or 12 cup cilantro, coarsely chopped
- 12 cup green onion, chopped
- 13 cup olive oil
- 13 cup pickle juice (from the pickle bottle)
- 1 large garlic clove, minced
- 1 tablespoon dried basil
- 1 teaspoon salt
- 14 teaspoon dried oregano
- Cook pasta until al dente; rinse and drain well.
- Transfer to a large salad bowl and mix with remaining salad ingredients; toss lightly.
- VINAIGRETTE: Combine all ingredients; mix well.
- Pour over salad and toss.
- Taste and adjust seasonings, if necessary.
- Cover and chill at least 2 hours up to 24 hours until serving.
