Tomato Salsa for Canning
- 12 cups diced tomatoes
- 1 bunch minced fresh cilantro
- 4 -5 garlic cloves, minced
- 3 tablespoons lemon juice
- 1 tablespoon sugar
- 1 teaspoon cumin
- 4 green onions, diced
- 2 cups diced onions
- 1 cup white vinegar
- 3 tablespoons salt
- 1 tablespoon pepper
- 2 seeded jalapenos, minced, start small and may add an extra to taste
- Place all ingredients in a pot on medium heat, gently stir occasionally until simmering, do not allow it to burn.
- When simmering well, spoon into prepared jars and place in boiling hot water pot.
- Process 15 minutes for pints, 20 minutes for quarts.
