Easy for Everyone: Fluffy Sponge Cake

  1. Preparations: Separate the egg whites and yolks.
  2. Sift the flour.
  3. Line a cake pan with parchment paper.
  4. Whip the egg whites.
  5. You can't whip white if there is water or oil.
  6. Please use a clean dry bowl and hand mixer.
  7. When the egg whites become white, add 1/4 of the sugar in two batches and whip.
  8. Whip the egg whites into a firm meringue.
  9. The peaks should point straight up without collapsing at all.
  10. Whip the egg yolks and rest of the sugar.
  11. Preheat the oven to 180C.
  12. Add the flour to the yolk mixture and mix until smooth.
  13. Add 1/3 of the meringue and mix with a whisk.
  14. It's okay if the meringue bubbles collapse.
  15. Add the rest of the meringue in two batches and fold in with a rubber spatula.
  16. Bake in a 180C oven for 13 minutes.
  17. When baked, remove the cake from the pan right away and cool on a rack.
  18. Cover the cake with a wet towel to keep moist.
