Simply Good Chicken Casserole
- 3 lbs broiler-fryer chickens
- 2 quarts water
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 (10 3/4 ounce) can cream of chicken soup, undiluted
- 1 (10 3/4 ounce) can cream of celery soup, undiluted
- 1 (8 ounce) carton sour cream
- 12 teaspoon pepper
- 0.5 (16 ounce) package buttery crackers (2 stacks, crushed)
- 14 cup butter or 14 cup margarine, melted
- Combine first 4 ingredients in a large Dutch oven, bring to a boil.
- Cover, reduce heat, and simmer 1 hour or until tender.
- Remove chicken, and cool slightly.
- Skin and bone chicken, cut into bite-size pieces.
- In a large bowl, combine chicken, soups, sour cream and pepper.
- Place half of crushed crackers in a lightly greased 7x11 baking dish;
- spoon chicken mixture over crackers.
- Top with remaining cracker crumbs and drizzle with butter.
- Bake at 325 degrees for 35 minutes or until lightly browned.
