A Southwestern Light Cassoulet Recipe
- 2 Tbsp. extra virgin olive oil
- 1/2 lb turkey sausage, crumbled
- 1 med yellow onion, diced
- 1 med green bell pepper, minced
- 1 1/2 lb boneless skinless chicken breasts, diced
- 2 c. tomatoes, chop, peel & cooked
- 1 x dry pasado chile, crushed
- 2 c. cooked white Great Northern beans
- 1/2 tsp salt
- 1/2 tsp grnd white pepper
- 1 tsp Worcestershire sauce Several dashes of Tabasco sauce
- Preheat oven to 325 degrees.
- Heat the oil in a large, heavy frying pan and saute/fry the sausage, onion, and bell pepper for 3 to 4 min.
- Stir in the chicken and lightly brown.
- Place the mix in a baking or possibly casserole dish.
- Stir in the tomatoes, chile, beans, salt, pepper, Worcestershire sauce, and Tabasco Bake in a 325-degree oven for 20 to 30 min or possibly till the chicken is done and everything is warm and bubbly
- SERVING SUGGESTIONS: Serve with a green salad with fresh lemon juice squeezed over it and crusty French bread.
