Basmati Rice with Mustard Seeds and Golden Raisins
- 2 2/3 cups water
- 1 1/3 cups Texmati rice* (American basmati) or brown basmati rice**
- 1/4 cup golden raisins
- 1 cinnamon stick
- 1 teaspoon mustard seeds
- 3/4 teaspoon salt
- 1/2 cup thinly sliced scallion greens
- *available at specialty foods shops and some supermarkets
- **available at Indian markets, natural foods stores, and some specialty foods shops
- In a 3-quart heavy saucepan stir together all ingredients except scallion and bring to a boil.
- Reduce heat to low and cook, covered, until rice is tender and liquid is absorbed, about 20 minutes.
- Fluff rice with a fork and stir in scallion.
