Dan's Tasty Pork
- 1 cup salt
- 2 12 lbs pork shoulder
- In a large pot combine apple juice concentrate, sugar and salt and add 5 cups water.
- While bringing to a simmer add bay leaf, peppercorns and thyme.
- Let simmer for 5 minutes and then cool completely (add ice cubes to speed this up).
- When completely cooled place the roast into the brine and weight it down to submerge.
- Brine the pork for 12 - 24 hours.
- Preheat oven to 375 degrees.
- Pat the roast dry, heat 2 tablespoons oil in large skillet.
- Brown roast on all sides, about 3 minutes per side.
- Place roast in a roasting pan and roast until the meat is at 160 degrees about 2 - 2 1/2 hours Remove from oven and let rest 10 minutes before carving.
