Smoked Chocolate Mocha Chicken
- 3 lb chicken thighs
- 2 tbsp dark brown sugar
- 1 tbsp coco unsweetened
- 2 tsp ground coffee any
- 2 tsp salt
- 1 tsp chili powder
- 1 tsp nutmeg
- 1 tsp coriander
- 1/2 tsp cumin
- 1/2 tsp black pepper
- Mix dry rub ingredients and seasoned chicken, very generously .
- Refrigerate for 24 hours.
- (must refrigerate 24 hours, there is no substitute for this step)
- Set up your grill for Indirect Heat with a drip pan in the middle.
- (add cold water to the drip pan)
- Place the chicken in the middle of the grill over the drip pan.
- Then add a small amount of wet hickory wood chips directly to the hot coals.
- Cook chicken for 1 hour to 1 hour and 15 minutes (or so).
- Maintain a cooking temperature of 350F.
- When the internal temperature of chicken which is 180F it is done.
- Let rest 5 to 10 minutes before serving.
