Smoked Chocolate Mocha Chicken

  1. Mix dry rub ingredients and seasoned chicken, very generously .
  2. Refrigerate for 24 hours.
  3. (must refrigerate 24 hours, there is no substitute for this step)
  4. Set up your grill for Indirect Heat with a drip pan in the middle.
  5. (add cold water to the drip pan)
  6. Place the chicken in the middle of the grill over the drip pan.
  7. Then add a small amount of wet hickory wood chips directly to the hot coals.
  8. Cook chicken for 1 hour to 1 hour and 15 minutes (or so).
  9. Maintain a cooking temperature of 350F.
  10. When the internal temperature of chicken which is 180F it is done.
  11. Let rest 5 to 10 minutes before serving.
