Pork Chop & Rice Dinner Recipe
- 4 (1/2" thick) lean pork chops
- 1/4 teaspoon pepper
- Vegetable cooking spray
- 1/4 c. diced onion
- 1/4 c. diced green pepper
- 1/2 c. uncooked regular rice
- 1 (28 ounce.) can tomatoes, undrained & minced
- 1/4 c. water
- 1/2 teaspoon salt
- 1/2 teaspoon prepared mustard
- Trim excess fat from chops; sprinkle with pepper.
- Coat a large skillet with cooking spray; place over medium heat till warm.
- Add in chops and cook till browned on both sides.
- Remove chops and drain on paper towels; wipe pan drippings from skillet with a paper towel.
- Coat skillet with additional cooking spray.
- Add in onion and green pepper to skillet and saute/fry till tender.
- Stir in rice, tomatoes, water, salt and mustard.
- Add in pork chops.
- Bring to a boil; cover, reduce heat and simmer 25 to 30 min or possibly till rice is tender and chops are done.
