Scalloped Green Peas And Onions Recipe
- 1/4 c. butter (1/2 stick)
- 1/4 c. flour
- 1 teaspoon salt
- 1 teaspoon seasoned salt
- 1/4 teaspoon pepper
- 2 c. lowfat milk
- 1 (10 ounce.) pkg. frzn peas, partially defrosted and broken apart
- 1 pound sm. white onions
- 1 pound potatoes, peeled and sliced
- 1 c. shredded Swiss cheese
- Heat butter in saucepan over low heat; blend in flour, salts, and pepper.
- Add in lowfat milk, stirring constantly.
- Cook and stir till sauce is smooth and thickened.
- Arrange 1/2 of the peas, onions, and potatoes in a buttered 1 1/2 qt shallow casserole.
- Spoon 1/2 the sauce over vegetables, sprinkle 1/2 the cheese over sauce.
- Repeat.
- Bake at 375 degrees till vegetable are tender, about 1 hour.
- Serves 6.
