Piri Piri Pork Stir-Fry

  1. Preheat the oven to 220C/200C Fan/Gas 7.
  2. Add the potatoes to a pan of boiling water, cover and simmer for 5 minutes.
  3. Drain.
  4. Put in a roasting tin with 1 tbsp oil and toss.
  5. Roast for 25 minutes.
  6. Heat 1tbsp oil in a wok or frying pan and stir-fry the pork for 4-5 minutes until cooked.
  7. Drain off any meat juices and reserve.
  8. Add 1tbsp oil and the carrots.
  9. Stir-fry for 1 minute.
  10. Add the remaining vegetables and stir-fry for another 2-3 minutes.
  11. Stir in the piri piri sauce, reserved meat juices and 2tbsp water and heat through.
  12. Serve with the potato wedges.
