Piquillo Peppers with Mediterranean Tuna Salad

  1. In a bowl, flake tuna.
  2. Add paprika, lemon zest, lemon juice, and oil; mix well.
  3. Season with salt and pepper to taste.
  4. Dry piquillo peppers on paper towels.
  5. Carefully split peppers open, remove seeds, and lay flat.
  6. Place a basil leaf on each and top with 1 tablespoon tuna mixture.
  7. Carefully roll to close.
  8. Seal each pepper with a toothpick if desired.
  9. Drizzle with extra oil and sprinkle with pepper; serve.
