Bell Pepper Relish
- 1 chopped yellow bell pepper
- 1 chopped orange bell pepper
- 4 chopped scallions
- 4 chopped radishes
- 1 garlic clove
- 1 chopped celery stalk
- 2 tbsp cider vinegar
- 2 tbsp chopped parsley
- 1 tbsp olive oil
- 2 tsp brown sugar
- 1/2 tsp celery salt
- 1/2 tsp kosher salt
- 1 pepper to taste (I use 1/4 teaspoon or more)
- Pulse yellow bell pepper, orange bell pepper, radishes, scallions, celery and garlic clove in a foid processor or blender until finely chopped.
- Whisk parsley, vinegar, olive oil, brown sugar, celery salt, kosher salt and pepper in a large bowl.
- Add the vegetable mixture; toss to coat.
