Cheese and Bacon Muffins

  1. Sift flour and baking powder together into a bowl, then add bacon, spring onion and parmesan cheese.
  2. Add butter, egg and milk, stirring until well combined.
  3. Spoon into 12 well-greased 1/2 cup capacity muffin pans.
  4. Top with extra bacon and bake at 190C for 20-25 minutes.
  5. Enjoy hot or cold.
