Justina's cheesy southwest chicken stuffed shells
- 3/4 cup milk
- 1/2 cup parmesan cheese
- 1/4 tsp black pepper
- 2 cup shredded mexican blend cheese
- 1 tsp paprika
- 12 large stuffing shells
- 1/2 can black beans ( drained )
- 1/2 can corn ( drained )
- 1/2 can diced tomatos w/ green chillies (drained)
- 8 oz pkg cream cheese
- 2 boneless chicken breast ( cooked & shredded)
- sprinkle chicken breasts with 1/2 of the paprika & cook in oven about 45 minutes set aside
- Meanwhile/ boil pasta till slightly tender rinse with cold water then set aside
- in small sauce pan melt cream cheese on low, stir in parmesan cheese pepper, and milk untill smooth
- in mixing bowl combine chicken, black beans, corn, tomatoes, and 3/4 cup of the sauce.
- carefully stuff shells and arrange on 9x13inch lightly greased baking dish
- pour remaining sauce over shells top with shredded cheese and sprinkle with remaining paprika
- cover and bake at 350 for 30 minutes or until bubbly
