Mushroom-Barley Soup
- 4 (14 1/2 ounce) cans beef broth
- 12 cup pearl barley
- 12 lb mixed mushrooms, cleaned and roughly chopped
- 1 large onion, diced
- 3 potatoes, cubed
- 2 large carrots, sliced
- 2 parsnips, sliced
- 2 tablespoons fresh parsley, minced
- 1 tablespoon fresh dill, minced
- salt and pepper, to taste
- Mix the beef broth and mushrooms and bring to a boil.
- Add the barley, and boil for 10 minutes.
- Add the remaining ingredients, and simmer for one hour.
- Serve hot.
