carla's potatoe and cheese
- 4 potatoe
- 1 bunch green onions
- 4 tbsp cheddar cheese
- 2 tbsp onion soup powder ( knor is available)
- 1 salt
- 3 tomatoes
- 1/4 tsp paprika
- 1 onion
- 2 clove garlic
- 1 tbsp vegetable oil
- 2 tsp oregano
- 1/4 tsp black pepper
- 1/2 green pepper
- 1 salt + black pepper
- 2 tbsp sour cream
- for preparing the sauce: cut the onion in small cubes and crush the garlic, add them to a saucepan with the olive oil, cook until softened.
- cut the tomatoe and green pepper in small cubes, add to the saucepan with salt pepper and paprika and oregano.
- cook for 20 to 25 minutes.
- once finish cooking, wait them to cool then blend and put in a sauce bowl.
- for the potatoe: wash potatoe with cool water, then use a fork and sting the potatoes many times.
- preheat the oven on 250F celcius, place the potatoes in pan and place them in the oven for 50 mins
- once finished, cut each potatoe in 2 portions, and wait for 5 mins.
- in a bowl evacuate each potatoe with a teaspoon, try to keep the potatoe skin on shape.
- in the same bowl, place the sour cream, the onion powder soup, green onions, cheddar cheese, pepper and salt.
- mix all together to get a nice combination
- fill each portion of empty potatoe with the combination and add extra cheddar cheese on the top.
- return the potatoe to the oven for 3 mns.
- serve the potatoe with the sauce, bon appetit
