Granmary's Great Granola Bars & Bites
- 1 14 cups crispy rice cereal (the kind that goes "snap, crackle, pop")
- 1 cup quick-cooking oats
- 14 cup raisins
- 14 cup brown sugar
- 18 cup corn syrup
- 18 cup honey
- 14 cup peanut butter (crunchy or smooth)
- 12 teaspoon vanilla extract
- Mix the cereal, oats, and raisins in a mixing bowl and set aside.
- In a small pot on the stove, stir together the brown sugar, corn syrup, and honey over medium to medium-high heat and bring to a rolling boil.
- Continue to boil for 1 minute, stirring constantly.
- Remove from heat and blend in the peanut butter and vanilla.
- Pour over the cereal/oat/raisin mixture and combine.
- At this point, you can roll into 1/2 inch spheres to make granola bites, or press into a small square or rectangular dish to form bars.
- Store tightly covered.
