Zucchini Bites with Smoked Salmon

  1. DRAIN excess moisture from the zucchini and combine with onions, 100g of the PHILLY, flour, cheese, oil, eggs and seasonings until well combined.
  2. SPOON the mixture into a greased and lined 22cm x 30cm pan.
  3. Bake in a moderate oven 180C for 30 minutes or until firm to touch.
  4. Allow to cool, then cut into 24 squares.
  5. COMBINE the remaining PHILLY, dill and rind.
  6. Top each square with a dollop of PHILLY mixture, smoked salmon and dill.
  7. Serve immediately.
