Low-Fat Paella
- 1 whole boneless chicken breast, cut in strips
- 1 onion, sliced
- 1 tsp. crushed garlic
- 2 Tbsp. safflower oil
- 2 c. water
- 2 c. chicken broth
- 1 c. uncooked brown rice
- 1 Tbsp. paprika
- 1/2 tsp. pepper
- 1/4 tsp. cayenne pepper
- 1/2 tsp. salt-free herb seasoning
- 1 Tbsp. dried parsley
- 1 (14 oz.) can chopped tomatoes
- 1 (10 oz.) pkg. frozen peas
- 2 Tbsp. chopped pimientos
- In large pot, saute chicken, onion and garlic until chicken is slightly brown.
- Add water, rice, broth, seasonings and tomatoes. Bring to boil.
- Reduce heat.
- Cover.
- Simmer 45 minutes.
- Stir in peas and pimientos.
- Simmer 10 minutes.
- Serves 4.
