Low-Fat Paella

  1. In large pot, saute chicken, onion and garlic until chicken is slightly brown.
  2. Add water, rice, broth, seasonings and tomatoes. Bring to boil.
  3. Reduce heat.
  4. Cover.
  5. Simmer 45 minutes.
  6. Stir in peas and pimientos.
  7. Simmer 10 minutes.
  8. Serves 4.
