BBQ Beef Brisket

  1. Put a Dutch oven on the stove on high heat and add oil.
  2. Lightly pat down brisket, season with salt and pepper and place in the Dutch oven once oil is hot.
  3. Cook on both sides for 5 minutes and then place into a large crockpot.
  4. Lower heat on the Dutch oven to medium high and add onions.
  5. Cook for 1 minute and add tomato paste.
  6. Stir until well combined.
  7. Add bourbon and scrape up beef bits while deglazing.
  8. Let it simmer until liquid is reduced slightly, then add the rest of the ingredients.
  9. Lower heat slightly and let it simmer for about 5 minutes.
  10. Pour liquid over beef in crockpot and cook for 6 hours on high or 10 hours on low.
  11. The meat should be tender and ready to serve when you remove it from the crockpot.
  12. Serve alone or on a roll with some sharp cheddar.
