BBQ Beef Brisket
- 2 Tablespoons Cooking Oil (Vegetable Or Canola)
- 3 pounds Beef Brisket
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 2 cups White Onion, Diced
- 6 ounces, weight Tomato Paste
- 1/2 cups Bourbon
- 1 cup Coca Cola
- 2 Tablespoons White Vinegar
- 1/2 cups Beef Stock
- 1/2 cups Ketchup
- 1/2 cups Brown Sugar
- 2 Tablespoons Honey Dijon Mustard
- 2 Tablespoons Molasses
- 2 Tablespoons Worcestershire Sauce
- 2 Tablespoons Liquid Smoke
- 1 Tablespoon Hot Sauce
- Put a Dutch oven on the stove on high heat and add oil.
- Lightly pat down brisket, season with salt and pepper and place in the Dutch oven once oil is hot.
- Cook on both sides for 5 minutes and then place into a large crockpot.
- Lower heat on the Dutch oven to medium high and add onions.
- Cook for 1 minute and add tomato paste.
- Stir until well combined.
- Add bourbon and scrape up beef bits while deglazing.
- Let it simmer until liquid is reduced slightly, then add the rest of the ingredients.
- Lower heat slightly and let it simmer for about 5 minutes.
- Pour liquid over beef in crockpot and cook for 6 hours on high or 10 hours on low.
- The meat should be tender and ready to serve when you remove it from the crockpot.
- Serve alone or on a roll with some sharp cheddar.
