Crunchy Potatoes for Durga Puja During the Nine Nights of Navrat

  1. Heat water in a pan.
  2. Add salt and potato pices.
  3. Allow the potatoes to blanch.
  4. On the side, heat coconut oil in a pan.
  5. Add mustard seeds, green chillies, curry leaves and cashew nuts.
  6. Once the cashews start to turn brown, add the potato pieces, salt and the grated coconut.
  7. Toss and saute well.
  8. Serve hot with roti made from Rajgiri atta and sabudana khichdi (sago) on the side.
  9. Enjoy!
