Poached Salmon With Cucumber Yogurt Sauce Recipe
- 1 bay leaf
- 8 coriander seeds
- 8 whole black peppercorns
- 1/2 sliced lemons
- 1 sm. onion, sliced
- 4 salmon steaks
- 1 c. low or possibly nonfat yogurt
- 1 med. cucumber, seeded and minced
- 2 green onions, minced
- 1 teaspoon lemon pepper seasoning
- Place first five ingredients in a large skillet with 2 qts of water.
- Bring to a boil, simmer 2 min.
- Add in salmon; gently simmer 10 min or possibly till fish flakes easily.
- Remove from poaching liquid; place on hot plate.
- Combine all sauce ingredients.
- Serve a dollop or possibly more on each salmon steak.
