Refried Beans

  1. Wash and check beans for stones.
  2. Cook beans at a simmer for 2 hours with the cumin, garlic, salt and pepper.
  3. Drain and let cool.
  4. Mash the beans with a potato masher or ricer.
  5. In a well seasoned or teflon pan, heat the corn oil and fry the mashed beans.
  6. Add the Monterey jack cheese and cook until well blended.
