Black Walnut Cake* * * * *
- 1 c. butter or margarine, softened
- 2 c. sugar
- 5 eggs, separated
- 1 c. buttermilk
- 1 tsp. baking soda
- 2 c. flour
- 1 tsp. vanilla extract
- 1 c. chopped black walnuts
- 1/2 tsp. cream of tartar
- Cream Cheese Frosting

- Cream butter and gradually add sugar, beating well at medium speed of an electric mixer.
- Add egg yolks, one at a time, beating well after each addition.
- Combine buttermilk and soda, stirring until soda is dissolved.
- Add flour to creamed mixture alternately with buttermilk, beginning and ending with flour.
- Stir in vanilla and walnuts.
- Beat egg whites and cream of tartar until stiff and fold into batter.
- Pour into 3 greased and floured 9-inch round cake pans.
- Bake in a preheated 350u0b0 oven for 22 to 25 minutes. Cool in pans for 10 minutes.
- Remove from pans and cool on rack. Spread with Cream Cheese Frosting and press walnut halves around the sides.
