Baked Halibut with Olive Relish (Kosher)
- 1/2 cup pimento-stuffed green olives, chopped (Kosher for Passover)
- 1/2 cup California pitted ripe olives(Kosher for Passover)
- 1 Tbsp. chopped fresh parsley
- 1 tsp. red wine vinegar (Kosher for Passover)
- 1 clove garlic, minced
- 3 Tbsp. olive oil, divided
- 4 halibut steaks, (1-1 1/2 lb.)
- salt and pepper
- Mix olives, parsley, vinegar, garlic and 1 tablespoon of the oil.
- Brush fish with remaining 2 tablespoons oil in 13x9-inch baking dish.
- Sprinkle with salt and pepper.
- Bake at 400F for 20 to 25 minutes or until fish flakes easily with fork.
- Transfer to serving platter.
- Spoon olive mixture over fish.
