Cheddar-Stuffed Meatloaf

  1. Heat oven to 350 degrees F
  2. Add boiling water to stuffing mix in large bowl; stir.
  3. Cover; let stand 5 min.
  4. Add meat, egg and 1/4 cup barbecue sauce; mix just until blended.
  5. Press half onto bottom of 8x4-inch loaf pan sprayed with cooking spray.
  6. Sprinkle half the cheese down centre of meat mixture in pan; cover with remaining meat mixture, pressing gently into pan to secure.
  7. Bake 50 min.
  8. or until done (160 degrees F), brushing with remaining barbecue sauce and topping with remaining cheese for the last 10 min.
  9. Top with tomatoes.
