Broccoli Salad
- 2 bunches broccoli, cut into florets
- 1 lb bacon
- 1 (2 1/4 ounce) cansliced black olives
- 1 cup walnut pieces
- 1 cup mayonnaise
- 12 cup sugar
- 14 cup cider vinegar
- Fill a large pot about 2/3 full of water and bring to a boil.
- Add the broccoli and cook for about 1-2 minutes.
- Drain the broccoli and add cold water.
- When the broccoli has cooled drain again.
- Let the broccoli sit in the colander for a while until the broccoli has no more water in it.
- While the broccoli is draining cook the bacon until crisp.
- Crumble or chop it into 1/2 inch pieces.
- Break the walnuts into pieces or chop it if you would like.
- Put the broccoli into a bowl, add the bacon, walnuts and black olives.
- In a small bowl whisk together the mayo, sugar and vinegar.
- Pour this over the broccoli and stir.
- I like to do this shortly before serving because the bacon stay crisp so if I am taking it somewhere I take the dressing in a seperate bowl.
