Broccoli Salad

  1. Fill a large pot about 2/3 full of water and bring to a boil.
  2. Add the broccoli and cook for about 1-2 minutes.
  3. Drain the broccoli and add cold water.
  4. When the broccoli has cooled drain again.
  5. Let the broccoli sit in the colander for a while until the broccoli has no more water in it.
  6. While the broccoli is draining cook the bacon until crisp.
  7. Crumble or chop it into 1/2 inch pieces.
  8. Break the walnuts into pieces or chop it if you would like.
  9. Put the broccoli into a bowl, add the bacon, walnuts and black olives.
  10. In a small bowl whisk together the mayo, sugar and vinegar.
  11. Pour this over the broccoli and stir.
  12. I like to do this shortly before serving because the bacon stay crisp so if I am taking it somewhere I take the dressing in a seperate bowl.
