BLT Sandwich with Chipotle Mayo
- 1/2 cups Mayonnaise
- 1 teaspoon Chipotle Pepper (canned, In Adobo Sauce), Minced
- 1 teaspoon Adobo Sauce (canned)
- 1 teaspoon Freshly Squeezed Lime Juice
- 4 slices Thick Bacon
- 4 slices Thick, Fresh Sourdough Bread
- 2 Tablespoons Chipotle Mayo (see Recipe Above)
- 2 leaves Lettuce (green Leaf, Red Leaf Or Romaine Work Best)
- 4 slices Fresh Tomato
- For the Chipotle Mayo:
- Combine all of the ingredients in a small mixing bowl and set aside.
- For the BLT sandwich assembly:
- Cook bacon in a skillet over medium-high heat until crisp, but not burnt.
- Once cooked, drain bacon on plate lined with paper towel and set aside.
- Lightly toast sourdough slices in broiler or toaster.
- Spread Chipotle Mayo over the insides of both slices of bread.
- Layer lettuce, then tomato slices (2 per sandwich) and finally bacon slices on top of bread.
- Place remaining slice of sourdough on top to make sandwich.
- Enjoy!
