Rosemary-Crusted Rack of Lamb
- 23 cup breadcrumbs
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh parsley
- 14 cup salted butter, melted
- 2 racks of lamb, trimmed
- salt and pepper
- 2 tablespoons Dijon mustard, divided
- Preheat broiler.
- Mix bread crumbs, rosemary, parsley and butter.
- Set aside.
- Season racks with salt and pepper.
- Place in skillet, meat side up.
- Interlock bones in center of pan.
- Cover bones with foil.
- Broil for 8-10 minutes.
- Remove pan from oven.
- Reduce heat to 325 degrees .
- Brush each rack with mustard.
- Spread bread crumb mixture over both racks.
- Roast in oven for 20-25 minutes
- Remove from oven and let rest 3-5 minutes.
