Rosemary-Crusted Rack of Lamb

  1. Preheat broiler.
  2. Mix bread crumbs, rosemary, parsley and butter.
  3. Set aside.
  4. Season racks with salt and pepper.
  5. Place in skillet, meat side up.
  6. Interlock bones in center of pan.
  7. Cover bones with foil.
  8. Broil for 8-10 minutes.
  9. Remove pan from oven.
  10. Reduce heat to 325 degrees .
  11. Brush each rack with mustard.
  12. Spread bread crumb mixture over both racks.
  13. Roast in oven for 20-25 minutes
  14. Remove from oven and let rest 3-5 minutes.
