Super Simple Butternut Squash

  1. Preheat your oven to 425 degrees F.
  2. Peel your butternut squash with a potato peeler.
  3. Cut into rings and slice out the seeds.
  4. Chop into 1 inch cubes.
  5. Spread the cubes out in a large baking dish and drizzle with olive oil.
  6. Add salt and cinnamon (if desired).
  7. Roast until soft, about 40 minutes.
  8. Remove from the oven and serve.
