Confetti Bell Peppers

  1. Preheat the broiler.
  2. Set peppers on a baking sheet.
  3. Broil as close to the heat as possible, turning, until skins blister evenly, 6-8 minutes.
  4. Transfer peppers to a bag and seal.
  5. Let steam for 10 minutes.
  6. When cool enough to handle, peel and seed peppers under running water.
  7. Set in a colander to drain.
  8. Finely dice peppers and place in a serving bowl.
  9. Mix with olive oil, garlic, cumin, salt, pepper and lemon juice.
  10. Serve chilled.
