Mango Chutney - 2

  1. Peel mangoes.
  2. Cut flesh into strips.
  3. finely chop OR pound garlic.
  4. Peel & finely cut ginger.
  5. Scrape tamarind & discard seeds ( if using fresh).
  6. Mix all solid ingredients.
  7. Boil vinegar.
  8. Pour over the mixture & stir well.
  9. When cool bottle & lable.

mangoes, raisins, green ginger, garlic, tamarind pulp, salt, sugar, vinegar
