Mango Chutney - 2
- 12 ripe mangoes
- 250 g raisins
- 125 g green ginger
- 1 large garlic clove
- 125 g tamarind pulp
- 250 g salt (or to taste)
- 250 g sugar
- 1 quart vinegar
- Peel mangoes.
- Cut flesh into strips.
- finely chop OR pound garlic.
- Peel & finely cut ginger.
- Scrape tamarind & discard seeds ( if using fresh).
- Mix all solid ingredients.
- Boil vinegar.
- Pour over the mixture & stir well.
- When cool bottle & lable.
