Black Bun Recipe
- 1 3/4 c. lowfat milk plus
- 3 Tbsp. lowfat milk
- 4 c. bread flour
- 1/2 tsp salt
- 1 1/2 c. butter softened
- 2 c. currents
- 2 c. raisins
- 1 c. prunes stoned
- 1 c. figs minced
- 6 Tbsp. orange marmalade
- 1/2 c. slivered almonds
- 2 tsp grnd cinnamon
- 2 tsp grnd cloves
- 2 tsp grnd ginger
- 1 tsp grnd cardamom
- 1/4 c. whiskey
- 1 x egg yolk
- 1 Tbsp. lowfat milk
- Place all of the dough ingredients in your machine in the order specified by your machine's manufacturer.
- Select the dough cycle and press start.
- Mix all of the filling ingredients together and set aside.
- When the dough is finished remove the dough and divide dough into thirds, combine two of the thirds and set aside.
- You should now have two dough balls, one larger than the other.
- Flatten the larger piece, and lay filling onto it.
- Knead filling and dough together till thoroughly incorporated.
- Roll out smaller dough piece into a circle.
- Place bun in center of dough; wrap completely, drawing together edges in the center of the top with a healthy pinch.
- Line a baking sheet with greaseproof paper, and invert bun on to pan (pinched side down).
- Cover and allow to rise for 30 to 40 min.
- Skewer right through bun several times before glazing with mixed egg yolk and lowfat milk.
- Bake in a preheated 350 degree oven for 2 hrs.
