Fresh raspberrie bars
- 1 cup Unsalted butter
- 1/4 cup Light brown sugar
- 1/2 tsp Kosher salt
- 2 cup All purpose flour
- 3/4 cup Seedless raspberry jam
- 1 pints Fresh raspberrie
- 8 oz Softend cream cheese
- 4 oz Goat cheese
- 1/2 cup Sugar
- 1 tbsp All purpose flour
- 1 large Egg
- 1 large Egg yolk
- 2 tbsp Lemon zest
- 2 tbsp Lemon juice
- 1/2 tsp Vanilla
- Preheat oven to 350
- Line 13 by 9 pan with foil, leaving some hanging over
- Beat butter until soft and add brown sugar
- Add 2 cups flour and mix until it forums a cohesive ball.
- Do not under mix.
- Press dough into bottom of pan and bake for 20 min.
- Cool for 5 min.
- Brush foil with butter on sides of pan.
- Spread jam evenly over crust.
- Sprinkle with fresh berries.
- In a large bowl beat cream cheese, and add sugar , 1 tbs flour, blend well.
- Add egg, egg yolk, lemon zest, juice, and vanilla.
- Pour custard over berries.
- Bake for 30 min.
- Or until barely set.
- Cool completely, and slice to serve.
