Chorizo Pasta with Tomatoes
- 8 ounces, weight Pasta
- 12 ounces, weight Smoked Chorizo, Halved And Thinly Sliced
- 1/2 whole Small Onion, Diced
- 3 cloves Garlic, Minced
- 1 pint Cherry Tomatoes, Halved
- 1/2 cups Heavy Cream
- 2 whole Scallions, Diced
- Cook pasta according to package directions.
- Over medium heat, heat a saute pan and add chorizo.
- Cook 5-10 minutes or until slightly browned and crispy.
- Drain some of the grease.
- Add onions and cook until translucent, 4-5 minutes.
- Add garlic and cook for 1 minute.
- Add cherry tomatoes and cook for 4-5 minutes or until juices starting to run.
- Add cream and reduce heat to low.
- Simmer on low heat for a few minutes.
- Serve sauce over the pasta and sprinkled with scallions.
