Apricot Salad
- 1 (20 oz.) can pineapple
- 1 (6 oz.) apricot Jell-O
- 2 c. boiling water
- 2 c. cold water
- 2 bananas, chopped
- 1 c. mini marshmallows
- 1 c. sugar
- 1/4 c. all-purpose flour
- 1/4 c. butter
- 2 eggs, lightly beaten
- 1 (8 oz.) cream cheese
- 1 1/4 oz. pkg. Dream Whip or Cool Whip
- Drain pineapple, keep juice.
- Combine boiling water and Jell-O until dissolved.
- Add cold water, bananas, marshmallows and pineapple.
- Mix well and chill until set.
- Add enough water to pineapple juice to make 1 cup.
- Combine liquid, sugar, flour, butter and eggs; cook until thick.
- Add cream cheese and continue stirring until cheese is melted; let cool and spread over Jell-O mix.
- Top with Cool Whip.
