Bahamian Sour Chicken-Vegetable Soup - Chicken Souse Soup

  1. In 4 qt.
  2. saucepan, bring chicken stock, allspice & pepper flakes to boil.
  3. Cover, simmer over low heat for 10 min.
  4. Add garlic, onion, celery, carrots & potatoes & simmer, covered, for 30 min.
  5. Add chicken & cook for 3-4 min., uncovered or till chicken is cooked.
  6. Season with salt to taste.
  7. Discard allspice tied in cheesecloth.
  8. Remove saucepan from heat & add lime juice, mint & cilantro.
  9. Serve immediately.
