Tex-Mex Meat Filling

  1. In a Dutch oven add 2 Tablespoons of cooking oil and heat to brown the meat.
  2. I use a potato masher to break-up the meat as its cooking.
  3. Drain the meat and remove the fat.
  4. Then add the meat back in and pour the picante sauce and V-8 juice into the pot and bring to rolling boil.
  5. Cook until the moisture is almost all gone and the filling is thick.
  6. Use as a filling in tacos, sandwiches, etc.
  7. I have also used ground chicken or turkey meat in place of beef and it works just fine.
