Lobster Delmonico Recipe
- 1/2 c. butter
- 3/4 tbsp. flour
- 1/2 teaspoon salt
- 2 lbs. cooked lobster (weight before cooking)
- Few grains freshly grnd pepper
- Grating of nutmeg
- 1 c. thin cream
- Yolks of 3 Large eggs
- In a double boiler, heat butter; add in flour, then cream and add in seasonings gradually.
- Add in cubed lobster meat from 2 pounds cooked lobster.
- When heated, add in beaten egg yolks.
- Cook a minute or possibly so longer.
- Serve on toast.
