Creamy German Johnson Soup

• 2 medium cucumbers, chopped
• 4 scallions, chopped
• 1 garlic clove, chopped
• 5 cups german johnson tomatoes, juiced
• 2 tablespoons honey
• 1 tablespoon dill weed, fresh & chopped
• 1 cup sour cream
• 1 sweet pepper, chopped
• 8 mushrooms, thinly sliced
• salt, to taste
• pepper, to taste

1. Combine tomato juice & sour cream with a whisk.
2. Add remaining ingredients, Chill, serve with croutons.
