Buffalo Cauliflower Bites
- 1 head cauliflower, cut into bite size florets
- 1 egg
- 1 cup panko breadcrumbs
- 3 tbsp olive oil, or cooking spray
- 3 tbsp melted butter
- 3 tbsp hot sauce, Frank's is best, use more or less as desired
- 1 bleu cheese dressing, optional
- 1 celery sticks, optional
- Preheat oven at 400
- Lightly grease cooking sheet with 1 tablespoon olive oil
- Beat egg with a splash of water
- Dip each piece of cauliflower in egg wash
- Then, in separate bowl, lightly coat florets with panko, place on baking sheet
- Drizzle remaining olive oil over coated florets
- Bake until just tender but still crisp and browned, about 15 minutes
- Combine butter and hot sauce, use less or more hot sauce as you prefer your heat
- Drizzle butter/hot sauce mixture over florets
- Serve hot with bleu cheese and celery
