Blackberry And Red Wine Compote Recipe
- 675 gm Ripe undamaged blackberries, (1 1/2lb)
- 2 x Lemons, juice of
- 1 x Orange, juice of
- 175 gm Caster sugar, (6oz)
- 1 bot red wine
- 85 ml Creme de mere, (blackberry liquer) (3fl ounce)
- 1 Tbsp. Finely minced fresh mint
- In a food processor blend half the blackberries with the 2 citrus juices till smooth.
- Strain the resulting puree through a fine sieve, into a non reactive saucepan.
- Throw away the pips.
- Add in the sugar and red wine over a medium heat and bring to the boil.
- Reduce the heat and simmer, skimming off any scum which may come to the surface, till the puree is reduced to about 450ml (16fl ounce).
- Allow to cold, just before serving mix in the remaining blackberries, the liqueur and the minced mint.
