Super-Circle Carrot Cake
- 4 cups carrots, grated, packed
- 3 cups pecans, chopped
- 2 cups unsalted sunflower seeds
- 1 cup raisins
- 2 cups whole wheat flour
- 2 cups old fashioned oats
- 2 cups unsweetened dried shredded coconut
- 1 cup flax seed meal
- 14 cup ground cinnamon
- 2 tablespoons ground cloves
- 1 tablespoon salt
- 1 tablespoon baking soda
- 2 cups coconut oil
- 2 cups honey
- 1 cup crushed pineapple, drained
- 1 cup unsweetened applesauce
- 1 cup Greek yogurt (regular)
- 12 extra-large eggs, beaten
- 16 ounces cream cheese, softened
- 8 ounces unsalted butter, softened
- 2 cups unsweetened dried shredded coconut
- 1 cup honey
- 12 cup fresh lemon juice
- 12 teaspoon salt
- Prep first four ingredients.
- Combine flour through baking soda in huge bowl.
- Slowly melt oil in medium saucepan.
- Stir in honey.
- Remove from heat.
- Combine pineapple through eggs in large bowl.
- Preheat oven to 300F.
- Add oil mixture to egg mixture (without stirring).
- Add wet mixture to dry mixture.
- Mix well.
- Stir in first four ingredients.
- Transfer to a 16x3" pan.
- Form layer that is thicker toward edge.
- Bake two hours.
- Blend remaining ingredients.
- Chill.
- Cut cooled cake.
- Chill.
- Frost just before serving.
