Fiesta Ranch Potatoes with Creamy Chile Dip

• 1 package salad dressing mix, ranch
• 5 medium russet potatoes cut lengthwise into eights
• 2 tablespoons vegetable oil
• 1 pint sour cream
• 1 can green chili peppers diced
• 1 package salad dressing mix, ranch

1. Shake mix and potatoes together in plastic bag.
2. When potatoes are coated, add oil, shake/rub to coat.
3. Bake at 425'F.
4. in a single layer on greased baking pan 40 minutes - until browned.
5. Serve with Chile Dip.
6. CHILE DIP: Combine sour cream, diced green chilies and Ranch Party Dip Mix.
7. Stir to blend.
8. Chill for at least 1 hour.
9. Makes 213 cups.
