Apple Fennel Compote Recipe

  1. Cut fennel into thin slices.
  2. Peel, core and slice apples.
  3. Heat butter and extra virgin olive oil in skillet over medium-high heat and cook fennel till softened, about 5 min.
  4. Add in apples and cook several more min.
  5. Add in vinegar, orange juice, peppercorns and cinnamon stick.
  6. Lower heat and simmer till apples are tender but not mushy, 15 to 20 min.
  7. Season to taste with Pernod.
  8. This recipe yields 8 servings.
