Apple Fennel Compote Recipe
- 2 sm fennel bulbs
- 6 x baking apples
- 1 Tbsp. butter
- 1 1/2 Tbsp. extra virgin olive oil
- 1/4 c. apple cider vinegar
- 3/4 c. orange juice
- 1 x cinnamon stick
- 10 x peppercorns - (to 12)
- 1 Tbsp. pernod - (to 2 tbspns)
- Cut fennel into thin slices.
- Peel, core and slice apples.
- Heat butter and extra virgin olive oil in skillet over medium-high heat and cook fennel till softened, about 5 min.
- Add in apples and cook several more min.
- Add in vinegar, orange juice, peppercorns and cinnamon stick.
- Lower heat and simmer till apples are tender but not mushy, 15 to 20 min.
- Season to taste with Pernod.
- This recipe yields 8 servings.
