Wholegrain Rice Salad

  1. Cook rice.
  2. In mesuring cup, stir together yogurt, vinegar, salt and pepper to taste.
  3. Pour over rice and gently stir in peppers, cucumbers, green onions, parsley and olives.
  4. Cover and chill for at least 1 hour before serving in lettuce lined bowl.
