Wholegrain Rice Salad
- 1 cup uncle ben's wholegrain brown rice
- 34 cup plain yogurt
- 2 tablespoons white vinegar
- 1 teaspoon sugar
- salt and pepper
- 1 cup diced sweet pepper (red, green or orange, or a combination)
- 12 diced unpeeled cucumber
- 2 green onions, finely chopped
- 2 tablespoons parsley, chopped
- 2 tablespoons black olives, chopped
- lettuce
- Cook rice.
- In mesuring cup, stir together yogurt, vinegar, salt and pepper to taste.
- Pour over rice and gently stir in peppers, cucumbers, green onions, parsley and olives.
- Cover and chill for at least 1 hour before serving in lettuce lined bowl.
