Chocolate Charlotte Russe Recipe
- 4 sq. unsweetened chocolate
- 6 Large eggs, separated
- 3 sticks butter, soft
- 1 1/2 c. sugar
- 3/4 c. confectioners' sugar
- 1 teaspoon vanilla
- 1/3 c. lowfat milk
- 3 doz. lady fingers
- Heat chocolate in top part of double boiler.
- Mix egg yolks with lowfat milk and 3/4 c. sugar.
- Mix with chocolate in double boiler and cook till thickened, stirring constantly.
- Cold in refrigerator till cold.
- Beat egg whites with some salt till stiff.
- Add in confectioners' sugar gradually.
- Mix softened butter with 3/4 c. sugar.
- Add in chocolate mix to butter mix.
- Mix in egg whites.
- Line springform pan with lady fingers side first then bottom.
- Add in 1/3 of mix layer of lady finger then 1/3 mix keep layering top with whip cream.
